Garlic shrimp and beet salad

Mmm-Mmm good! Garlic shrimp and beet salad. Delicious!

Beets-so good for endurance with anti-inflammatory and antioxidant benefits! Plus they taste great! Add in some garlic, pecans, green apple, goat cheese and a little cinnamon to produce a wallop of flavor! Complete with some low calorie wild shrimp full of omega-3s and protein, saute in a touch of olive oil and lots of garlic. Serve over fig vinegar and honey drizzled spinach (full of cancer-fighting nutrients and vitamin C). Makes for a healthy and delectable meal for any athlete! YUM!
